To remove the dish correctly first loosen the bolts and nuts holding the dish to the mounting bracket and gently lift it off to remove the dish separately from the mount.

I ve removed them complete and left the lag bolts in the holes.
Be sure to make clear if they are disposing of it or you are and if it has to come down intact or can be cut apart or tossed off roof.
The wires you could either just cut them where there are or follow them back to where they go into the house and cut them there.
Or if need just connect the cable from the road to that wire.
Also make clear what is to be done with antenna cable and power cable if has antenna mounted amplified and how holes are to be sealed.
Another alternative if you are worried about color or shingle thickness match especially if your roof does not need snow shoveling ever is to have them remove the dish and mounts fill the holes with the asphaltic sealant but then reinstall the bolts snug but not digging into to the shingles to refill the holes with no shingle replacement unless they are broken.
